After being greeted in the winery, your group is taken on a tour through the facility to experience the art of the wine making process. Arriving at the tasting table, there is a six-glass wine-flight set up for each person, where we walk everyone through six wines from three different wine regions of NSW. Generally, these are two whites, a rose and three reds. The wine flight covers ‘how to taste wine’ as well as a booklet for each individual to take home covering the wine regions of NSW and tasting notes from the wines tried. These sessions are one of the more entertaining and informative classes. The class starts with everyone being separated into groups of four, sitting down with the winemaker and being taken through six single variety red wines; exploring the aroma, structure and palate-feel of each.
Each group is then given measuring cylinders and half an hour to come up with their favourite blend, for example, mixing 50% shiraz, 30% merlot, 10% petit verdot and 10% tempranillo. These ‘favourite blends’ are then collated and poured to the groups, so they can be blind-tasted and judged by everyone involved – with an ultimate winner appointed on the day.
